What is it that is covered in vinegar? Rice. Sushi in Japan means 'rice in vinegar'. Rice is rich in minerals such as phosphorus, starch and vitamin B1, with a high level of carbohydrates.&lt;/p&gt;&lt;p&gt;Ginger and vinegar have antiseptic properties, and also stimulate the appetite and help digestion. &lt;/p&gt;&lt;p&gt;Soya sauce is very rich in proteins and iron . In addition the fats in soja, which are mainly unsaturated , provide fatty acids which are essential against cholesterol. &lt;/p&gt;&lt;p&gt;Dried seaweed (nori) provides multivitamins and calcium.&lt;/p&gt;&lt;p&gt;Wasabi protects against tooth decay. It contains molecules called isothiocyanates, which prevent bacteria from adhering to the teeth. &lt;/p&gt;&lt;p&gt;Sushi is an excellent healthy well-balanced dish.
